Germany produced about 72,800 tonnes of gingerbread in 2025, according to Destatis. Output was 10% below 2024 and the lowest in seven years. The figure covers production, not sales or household consumption.

Thirty-six percent of the year’s output was made from July through September. The manufacturing statistics cover establishments with at least 20 employees in the relevant industries, so they do not represent every small producer. Destatis also reported that exports were just under 20,000 tonnes; imports were about 10,000 tonnes. About half of exports went to Austria, Poland and France combined.
